At any time, you can click Refresh to update the data for the Pivot Tables in your workbook.
Change this value to "None", refresh your table, and any previously deleted fields will now be permanently removed from your pivot table filter. Seem the data would not be there and only the titles remained, which would have no use.
In Excel, when you remove or add rows or columns in your data range, the relative pivot table does not update at the same time. Note: Only rows are added at the bottom of original table data or columns are added at the very right, the pivot table range will update with clicking the Option (or Analyze) Make a table of your dataset and then quick analysis it or something to create a pivot table.
By default, your charts load data from the data source, when the dashboard is opened. Whether or not you get fresh data when you open the dashboard depends on your data source’s refresh schedule.

If you add new data to your Pivot Table data source, any Pivot Tables that were built on that data source need to be refreshed.
